Why does iCal insist I work Monday through Friday?

I know Apple Stores are open 7 days a week. Am also pretty sure there are people working in Cupertino on non-traditional days. Yet travel time on Mondays is always from work and Saturdays is always from home. I see where I can adjust the start of the week, but not the start of the work week. I would like to keep the same Sunday through Saturday calendar, yet be able to adjust my work week.

Along with that I have my work day set from 8 am to 6 pm. Yet if I make an 8 am appointment my travel time should not be from work. iCal knows it's a (in this case) 13 minute drive, which means it's 13 minutes before I'm at work. Therefore I'm not at work. Yet once again, travel time starts from work.

I'm completely open to the fact that I might be missing something in the settings. It just doesn't seem to be very flexible.
